Goff's Brunswick Stew

Cooking Time: 30 minutes to an hour

4 Quart Pot


2 medium potatoes diced
¼ cup of diced onion
1 pound of shredded cooked pork or chicken (dark meat) or combination of pork and chicken
2 cans of stewed tomatoes (14.+oz) chopped
1 can of cream style corn (14+oz)
½ cup ketchup
½ cup honey barbecue sauce
salt and pepper to taste
hot sauce to taste (I used Crystal Hot Sauce which isn't really hot, but has lots of flavor)


Cook the potatoes and onion in enough water to cover; cook until potatoes are tender. Add the remaining ingredients and simmer for at least a half an hour... an hour the flavors are more melded. Stir occasionally to prevent sticking.

I sometimes add small cooked butter (lima) beans or garden peppers or a little cumin.

When we've been out in our rv I have used canned potatoes and canned butter beans (drained). A pound of pork barbecue from the deli or freezer section could be used... just omit barbecue sauce.
